Cinammon Chickpeas

Try this recipe and mix up your afternoon snack.

Did you know cinnamon has anti-viral, anti-bacterial and anti-fungal properties? The distinctive smell and flavor of cinnamon comes from the essential oils contained in the bark, called cinnamaldehyde. Cinnamaldehyde displays anti-viral, anti-bacterial and anti-fungal properties. This is why cinnamon is thought to have many medicinal and soothing properties, and is used frequently in Chinese herbal medicine.

Try these easy cinnamon chickpeas as your next snack.

Makes 4 servings

INGREDIENTS

  • 1 14 oz can chickpeas, drained and rinsed

  • 1 TBSP oil of your choice

  • 1 tsp cinnamon

  • 1 tsp sweetener of your choice

  • 1 small pinch of salt

DIRECTIONS

  1. Use a paper towel to pat dry the rinsed and drained chickpeas. Remove any skins that come off while drying, or remove all skins if you wish.

  2. Preheat the oven to 400 degrees F.

  3. Spread the chickpeas out on a baking sheet lined with parchment paper.

  4. Cook the chickpeas in the oven for 15 minutes. Stir and roast for another 15 minutes.

  5. After a total of 30 minutes of roasting, remove chickpeas from the oven and drizzle with oil. Sprinkle with cinnamon, sweetener, and a pinch of salt. Stir to ensure all chickpeas are evenly coated.

  6. Return to the oven for another 10 minutes.
